We present an easy take on a beverage from the seasonal drinks list. This is a batch pre-mixed that's loaded full of tastes of a festive period, which makes it excellent for a holiday party. Reserve the remaining cordial for morning drinks, puddings, or to make another batch of bikinis.
Bikini Recipe
Serves 10 people
To make the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put the listed components in a pot, bring to a gentle boil, stirring until the sugar dissolves. Next, take off the burner and leave to reach room temperature entirely. Decant into a sterilised bottle, close it keeping it in the refrigerator, it can be stored for up to one month.
Preparing the Batch Mix: Mix the specified liquid ingredients into a big jug, let it rest for an hour, then strain best through cheesecloth, making it perfectly clear.
When ready to serve: Add 85ml of your cocktail base into your cocktail shaker filled with ice, and agitate lightly for one minute to chill. Strain into an cold coupe glass or a similar vessel, decorate with the cranberries and finish using a quick spritz with the mandarin essence over the top.
